Herbs should be dried by spreading them on a tray as evenly as possible.You can buy specialist herb dryers but its just as easy if not cheaper to buy some plastic shelves or metal trays that can be stacked.The most important thing is air circulation. Racks that have holes or gaps are perfect. Remember as the herbs dry they shrink, some by as much as a half, so make sure they cant fall through the gaps as this happens.
